Summer is all about gorgeous days, long summer nights, and light but tasty food. You don’t want to waste time cooking up a gourmet hot meal when you could be outside enjoying the fresh air and doing some more laps in the pool.
That’s why the team at LMC came up with our favorite summer salad recipes! They are fresh, nutritious, and simply delicious.
Watermelon, Feta, and Tomato Salad.
Enjoy the delightful combination of these three ingredients as they make up a fresh, zingy salad! Simply cut the watermelon and cherry tomatoes, and combine with olive oil, fresh lime juice, pure honey, and kosher salt and black pepper in a bowl. Add crumbled feta and it’s complete!
White Bean and Broccolini Salad
This is the perfect salad for beach days or picnics because there are no delicate vegetables involved. Cook the broccolini for 1-2 minutes, until crisp yet tender. Cut into large pieces once dry. Combine the broccolini with oil, lemon zest and juice, capers, mustard, and red pepper flakes in a bowl. Add the beans and season with salt and pepper. So simple, yet SO satisfying.
Heirloom Tomato Salad
Ah, the perfect accompaniment to a summer BBQ! Combine oil, vinegar, and honey in a bowl. Season with salt and pepper. Add cherry tomatoes and chives and toss until all ingredients are mixed. Arrange your heirloom tomatoes on a plate and season with oil, salt, and pepper. Top with the cherry tomato mixture! If you’re wanting extra, add some mozzarella or burrata to the salad. So refreshing and tasty!
